Classic Cheesecake

Why Classic Cheesecake is Special to Me

Cheesecake holds a special place in my heart as it was always the dessert of choice for big family gatherings. I remember my mom making it every year for our holiday dinners. The ritual of preparing it, watching it bake, and then letting it cool slowly in the oven was something I looked forward to. There was always a sense of anticipation as we eagerly awaited the first bite, the creamy filling melting in our mouths and pairing perfectly with the crumbly graham crust.

The best part about cheesecake is its versatility. You can enjoy it plain or top it with fresh berries, chocolate ganache, or caramel. It’s a dessert that brings people together—whether it's a birthday celebration or a quiet Sunday evening. For me, it’s not just the taste that makes cheesecake so special, but the memories and moments shared over each slice. It reminds me of family, warmth, and the joy of celebrating life's little victories.

Ingredients

For the Crust:
  • 1 1/2 cups graham cracker crumbs

  • 1/4 cup granulated sugar

  • 1/2 cup unsalted butter, melted

  • Pinch of salt

For the Cheesecake Filling:
  • 4 (8 oz) packages cream cheese, softened

  • 1 1/4 cups granulated sugar

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon salt

  • 4 large eggs, at room temperature

  • 1 cup sour cream, at room temperature

  • 1/4 cup heavy cream

For the Topping (optional):
  • Fresh berries (strawberries, blueberries, raspberries)

  • Fruit compote or jam

  • Whipped cream

Cooking Tools / Utensils Needed

  • 9-inch springform pan

  • Mixing bowls (for crust and filling)

  • Electric mixer or hand whisk

  • Spatula

  • Measuring cups and spoons

  • Roasting pan (for water bath)

  • Oven thermometer

  • Cooling rack

The Classic Cheesecake Making Process

1. Prepare the Crust

Preheat the oven to 325°F (160°C). In a medium mixing bowl, combine the graham cracker crumbs, sugar, melted butter, and a pinch of salt. Stir until everything is evenly combined. Press the mixture firmly into the bottom of a 9-inch springform pan, using the back of a spoon to compact it. Bake the crust in the preheated oven for 8–10 minutes or until golden and set. Once done, remove from the oven and let it cool while you prepare the filling.

2. Make the Cheesecake Filling

In a large mixing bowl, beat the softened cream cheese using an electric mixer on medium speed until smooth and creamy, about 2–3 minutes. Add the sugar, vanilla extract, and salt, continuing to mix until fully combined.

One at a time, add the eggs, beating well after each addition to incorporate them completely into the mixture. Be careful not to overmix, as too much air can cause cracking during baking. After all the eggs are added, stir in the sour cream and heavy cream, mixing until the filling is smooth and creamy.

3. Prepare for Baking (Water Bath)

To prevent cracking and ensure even cooking, a water bath is essential. Wrap the outside of your springform pan with a double layer of heavy-duty aluminum foil to prevent water from leaking in. Place the pan inside a larger roasting pan, then pour hot water into the roasting pan until it comes halfway up the sides of the springform pan.

4. Bake the Cheesecake

Carefully pour the cheesecake filling into the prepared crust. Smooth the top with a spatula. Place the springform pan in the preheated oven and bake for 55–65 minutes. The cheesecake should be set around the edges but still slightly jiggly in the center. The top might appear a little puffed, but that’s perfectly normal. Turn off the oven, crack the oven door slightly, and let the cheesecake cool for 1 hour.

5. Chill the Cheesecake

Once cooled, transfer the cheesecake to the refrigerator and chill for at least 4 hours, or preferably overnight. This allows the flavors to set and the texture to become perfectly smooth and firm.

6. Serve and Garnish

Before serving, carefully remove the cheesecake from the springform pan. You can top the cheesecake with fresh berries, fruit compote, or a dollop of whipped cream for added flavor and decoration. Slice the cheesecake carefully using a sharp knife, wiping the blade clean after each cut for neat slices.
